Cabbage and Apple Slaw

  • 1/4 cup walnut oil
  • 2 Tbs. red wine vinegar
  • 1 Tbs. brown sugar
  • 6 cups thinly sliced red cabbage
  • 2 apples, peeled and diced
  • 3/4 cup diced celery (about 3 ribs)
  • 3 scallions, thinly sliced, white and green parts separated
  • Kosher salt and freshly ground black pepper

Preparation

  • In a small bowl, combine the oil, vinegar, and brown sugar.

  • Top with the scallion greens and serve.
