Throughout, Holmberg explains in detail what is going on in a particular sauce, what you can do with it, and how you can fix it should something go wrong. Her declarations are both amusing and informative: She calls beurre blanc “the poster child for misunderstood French sauces” before explaining why it’s actually one of the easiest sauces to make.
