Smoky Tomato and Mushroom Pie

Smoke the mushrooms

    **************************************/I really liked this and will definitely make again. But I did not make as written. My sharp Cheddar was in the freezer so I used Gruyere, which was not. I live in a toy apartment and did not smoke the mushrooms. I just sauteed till dry. Used dried basil (that's all I had). I hated the crust. I'm not sure what that difficult, sticky dough brought to the table. Next time, I'll just use a cream cheese dough. I also did not prebake the crust. I just heat the oven with an upside down sheet pan inside and no soggy bottom. Other than my issues with the crust dough, I thought this was a very good, flavorful, easy dish to make.

    I'm going to try this even though I don't have an outdoor space for smoking. I think adding a bit of Worcestershire sauce will add depth of flavor. I realize that smoking the mushrooms would be amazing but it's not an option for me. I'm sure it will be delicious! Love the recipes here more so than any other site.
