Cilantro Dip

Yield:Yields 1 cup

A dipping sauce made with fresh cilantro is one of the traditional accompaniements to Indiansamosas. It can be made up to two weeks in advance and kept, covered, in the refrigerator.

  • 1 cup packed fresh cilantro leaves and tender stems
  • 1/2 cup fresh lemon juice
  • 1/4 cup chopped walnuts
  • 3 small, fresh hot chiles (such as jalapeño or serrano), stemmed and seeded
  • 2 large cloves garlic
  • 2 Tbs. sugar
  • Kosher salt, to taste

Preparation

  • Combine all ingredients except the salt in a food processor and purée thoroughly. Transfer to a bowl and add salt to taste.

    This is too much lemon juice. I altered the recipe to 1/4 cup instead.

    Too much sugar and hot peppers for this amount. Other than that - great stuff!!! I had to adjust my second prep a little, perhaps because of variation in ingredients and personal taste.

    My family loves the Indian recipes from Fine Cooking - Chicken Tikki Masala, Naan and Samosas - and this Cilantro Dip is an outstanding accompaniment!
