It’s the Monday after Easter, in case you were unaware, and I’m guessing you’ve got at least a dozen colorfully dyed, hard boiled eggs laying around your refrigerator and kitchen right about now. LuckilyOlga, of the informative blogMango & Tomato, has got a recipe for a simplegreen salad topped with hard boiled eggs.
The great thing about this salad is that you can basically throw in whatever veggies or pickles you’ve got on hand. Olga’s version consists of crisp, bitter endive, cool cucumbers and spicy radishes along with scallions, cilantro and pickled green beans. The hard boiled eggs add a creamy richness to the salad that balances out the bitter, spicy and tangy flavors in the salad.
Have some asparagus hanging around? Throw them in! Spinach or arugula would work too. Instead of mixing up a batch of heavy, mayo-based egg salad this week, make a bunch of delicious green salads and top them with protein-rich eggs for a balanced and satisfying meal.
