Turkey and Sweet-Hot Pepper Grilled Cheese

Scott Phillips

Servings:2

A mixture of cream cheese and grated cheese makes a luxurious sandwich. Spicy mustard and sweet pickled jalapeños add just enough heat to counter all that richness. Look for the chiles in the pickle and condiment aisle at the supermarket.

Preparation

  • In a medium bowl, mix both cheeses and the dill until blended.
  • Butter one side of two slices of bread, and place butter side down in a 12-inch nonstick skillet. Spread the mustard on top. Divide half of the cheese mixture between the two slices of bread. Divide the turkey and then the peppers between the two, then the remaining cheese. Butter the remaining two slices of bread and top the sandwich butter side up.
  • Cook over medium heat, pressing lightly on the sandwich, until deep golden brown, 2 to 4 minutes. Flip and cook until the other side is golden brown and the cheese has melted, another 3 to 4 minutes. Let cool briefly before slicing and serving.

Made exactly as written except my husband assembled the sandwiches and didn’t use as much cheese or jalapeños as called for. When we made second helpings, we upped he cheese and chilis and loved this! I will definately make again.

Super simple. Made this in the panini press for quick dinner. Substituted marscapone for cream cheese just because that's what I had on hand.
