Goma Dressing

Yield:about 3/4 cup

Use this flavorful dressing on delicate Asian salad leaves or stirred through heartier stir-fried greens. Goma means sesame in Japanese, and the earthy flavor sesame seeds lend to this dressing proves the perfect complement to the pungent, spicy notes in many Asian greens.

  • 2 Tbs. toasted sesame seeds
  • 3 Tbs. Japanese or whole-egg mayonnaise
  • 3 Tbs. unseasoned rice vinegar
  • 2 Tbs. mirin
  • 2 Tbs. soy sauce
  • 1/2 tsp. fresh ginger, finely chopped and mashed to a paste
  • 1/4 tsp. kosher salt
  • 4 Tbs. olive oil
  • 2 tsp. sesame oil

Preparation
