Whether it’s your first Thanksgiving as host, or you are just cooking for a small crowd, this is a simple-but-stunning menu that features plenty of crowd-pleasing flavors (once you try thesegarlic-mashed potatoes, you’ll never want them any other way). Instead of a turkey, it centers on a large chicken, which drastically cuts the cooking time. In fact, you can knock out the whole menu in 2 hours, or prep a few items the night before to make the timeline even more relaxed.

Menu Timeline

One Day Ahead

  • Make the cranberry glaze; refrigerate.
  • Make the cranberry relish; refrigerate.

2 Hours Ahead

  • Begin cooking the potatoes.

1-1/2 Hours Ahead

  • Begin roasting the chicken.
  • Finish the mashed potatoes and keep warm in a slow cooker set on warm, or a heatproof covered bowl set over a pan of barely simmering water.

45 Minutes Ahead

  • Roast the Brussels sprouts.

15 Minutes Ahead

  • Saute the wild mushrooms and finish the Brussels sprout dish.
  • Carve the chicken.
