What is it?

Flour made from ground rice is available as white rice flour (ground from refined white rice) as well as brown rice flour (ground from whole-grain brown rice), with the latter offering more fiber and nutrients since it contains the rice bran. Flour made from glutinous (or sweet) rice is also available, but should not be substituted for white or brown rice flour.

Rice flour is gluten-free, making it a popular substitute for all-purpose flour (along with other alternative flours) for those with gluten sensitivities. It also adds lightness and crunch to baked goods or fried batters when used in combination with wheat flour.
